Wednesday is "Recipe" Day.

Recipe: a set of instructions for making or preparing something, esp. a food dish: a recipe for a cake.

Who knew that y’all would be interested in recipes that are a part of my family? I have to admit though; my family was cracking up at how everyone just LOVED the recipes.

You see friends; I’ve a confession to make.

I’m not exactly the cooking type.

It’s not that I can’t cook. I can. I just don’t get excited about it like everyone else does. I get excited about eating! So I’ve got that going for me right? Plus, when I’m at my parents’ house, it gets crowded in the kitchen quickly. So I make my contribution by sitting at the table or in the living room talking to my mom and sister.

In fact, I even hesitated to post those recipes yesterday because of my low profile in the kitchen. However, I also happen to possess some of the finest recipes known to man because of my family. I would only be doing my momma and her cooking a disservice too if I didn’t mention just how fabulous of a cook she is.

And like any good cook, she has her favorite ingredient. You know, Paula Dean has butter. My mom has cream cheese.

I am telling you now that these recipes are not fat-free. (And as a side note, when I start working out again, I also want to say that I do not diet. I just lower my portions. If my body craves something, it craves it for a reason. I just don’t go overboard when it does.)

So, here’s the top three recipes requested from my mom when she goes somewhere and these are just a main dish, dip and side. There’s desserts too! All three are recipes that were given to her to make, but when made everyone wants my mom to be the one to make them. They are very Southern and very good. I have more cream cheese recipes and in fact, it’s become a running joke in B’s family that everything I make for them has cream cheese in it. They’re not complaining obviously because they ask for it on a pretty regular basis for big meals. It’s just a tendency that the good ones have cream cheese in it.

Falls Creek Enchiladas (so named because it is made in our cabin each year at church camp)
Pkg. of 20 tortillas
2 or 3 pkg. cream cheese
1 bag of frozen chicken breast (boil )
1 small onion (chopped)
2 small cans green chillis
1 qt. of heavy cream
2 pkg. of colby jack cheese
½ stick of butter

Put butter and onions in sauce pan cook for about 5 minutes. Then add green chillis to the onions.
Add cream cheese until smooth. Then add cooked chicken. Mix all the ingredients together.
Roll that mixture into the tortillas. Put into pan. Cover with cheese and then the heavy cream.
Bake until cheese is melted and bubbling. Enjoy!

Cream Cheese Sausage Dip
1 pkg. of cream cheese
1 can of rotel
1 small container of sour cream
1 small pkg. of sausage

Brown the sausage. Pour all ingredients into a crockpot/slow cooker and set on low/medium. Stir until ingredients are melted. Dip with salsa chips. Enjoy!

Cream Corn
1 pkg family size frozen corn
1 stick of butter
1 pkg. of cream cheese
¼ cup of sugar

Dump all ingredients into crock pot/slow cooker. Set on medium. Stir occasionally until ingredients are melted. Salt and pepper to taste. Enjoy!

Cream cheese. I'm so glad that I just ate lunch, otherwise you may be hearing my stomach growling!!

Just so you know, I used cream cheese in my salsa chicken dinner tonight!

I'll work out harder, but I won't give up my cream cheese!

Your lucky that you posted about your parents anniversary because I or Big Man would have asked your mom to marry us...those sound freakin delish!!
